
Last week, I made Vegan Chai Ice Cream*. It was delicious. This cashew-based, creamy, spicy, and sweet dessert has turned me into a vegan ice-cream lover. I’m never going back.
The first thing that came to my mind was the vegan ginger cookies that I had shared at Christmas. They tend to be more delicate and easier to handle when made in circles rather than cutout shapes. Plus, hello! Ginger cookies + chai ice cream? A match made in heaven!
I deliberately under-baked them just a little so that they would be extra tender and soft when you bite into them, especially when they are frozen. The texture was improved! If you prefer a crispier texture, bake the cookies for an additional 1-2 minutes. The flavor is amazing in either case.

When you bite into it? Oh my! The cookie is moist, and the ice cream melts beautifully – it’s super creamy and velvety. The chai and ginger combination is also to die for.
Ingredients
- ~2.5 cups Vegan Chai Ice Cream
- 16 Whole Gluten-Free Vegan Ginger Cookies Made in Circles, Not Shapes
Instructions
- Follow the instructions in the cookie recipe. Once cookies have cooled down, please place them in the freezer for hardening.
- Soften the chai ice cream until it is scoopable. Scoop 1/4 cup portions into a lid lined with plastic wrap of a peanut-butter jar or other similar-shaped object. Fold the plastic wrap over the ice cream, remove the lid,, and form it into a disc. Put the ice cream back in the freezer for a second hardening. If you don’t mind the shape of the cookies, you can also smash a large scoop in between them.
- Unwrap the ice cream discs after about 30 minutes and sandwich them between two cookies of similar sizes/shapes. Use a flattening tool to flatten the ice cream discs and then a clean finger or utensil to smooth out the sides.
- Put the frozen food back into the freezer for a few minutes to allow it to set. The frozen bag or container can be kept in the freezer for a few weeks. However, the best results are achieved within the first couple of days.
- Let them sit out to soften for 5-10 minutes before eating. If you are impatient, like me, then microwaving for 8 seconds will make them soft. Oh, my goodness.
