This is the most moist and fudgy banana bread that you have ever had! This classic comfort food is made with dried apricots, cocoa, coconut flour and green banana powder. It can be served for breakfast or as a dessert. Dairy-free & vegan.
INGREDIENTS:

- 1 flax “egg”, (1 tbsp flax milled + 2.5 tbsp of water)
- One large banana that is overripe
- 1/3 cup coconut oil, melted
- Half a cup of oat or any other plant-based milk
- 1 cup Organic Green Banana Powder
- Coconut flour 1/4 cup
- Cocoa powder , 1/3 cup
- Ground cinnamon 1/2 tsp
- 1 tsp of baking soda
- 1/4 tsp salt
- 1 cup dried organic apricots (chopped)
INSTRUCTIONS:

- Pre-heat the oven to 350F. Line a 9-by-5-inch loaf pan with parchment paper.
- Mix the flax seed milled with water in a small dish with a fork. Allow to gel for 10 minutes.
- In a large bowl, mash the banana until it is completely smooth.
- Add the coconut oil melted and flax “egg”. Mix well.
- Add the cocoa powder, banana powder, baking soda and cinnamon. At this point, the batter will be very thick.
- Mix the milk slowly until the batter becomes smooth and velvety.
- Fold in 1/2 cup dried apricots.
- Pour the batter in a pan that has been prepared and bake it for 20 minutes.
- Slices should be slightly cooled before cutting. Enjoy!
