This green sauce is a delicious version of chimichurri. This is my new favorite! Let’s go!
Chimichurri: Origin and History
Chimichurri, a popular condiment from Argentina, is widely used. The origin of the name is not known, but some believe it comes from the Basque word “tximitxurri” or “Jimmy’s curry,” which refers to a 19th-century Irish or Englishman.
This condiment is made with parsley, oregano, and red pepper flakes. It also contains olive oil, vinegar, garlic, and some other ingredients.
This inspired version includes parsley, garlic, and other similar ingredients, as well as flavors from green Chutney and Guacamole.
Make Magic Green Sauce
It takes only 10 mins, eight ingredients, and one bowl to prepare this magical green sauce.
Garlic and spicy serrano pepper form the base and are then topped with fresh parsley and cilantro. The flavors are balanced with lime juice, maple syrup, and salt. And avocado adds a creamy, silky-smooth finish.
You have delicious green sauce in 10 minutes! This sauce is delicious, so go ahead and spread it on anything (we can then be twins).
Ingredients
- Five cloves of garlic (peeled, crushed and mashed)
- Use less if you don’t like spicy foods.
- 1 cup chopped cilantro (thick stems removed from the bottom)
- 1 cup packed flat-leaf parsley
- 3 Tbsp ripe avocado
- Salt to taste: 1/4 teaspoon
- 3 Tbsp of lime juice
- 1 Tbsp of maple syrup or other sweetener.
- Use more water or 1 Tbsp of avocado oil (optional)
- Water (to thin // 3 Tbsp. or 45 ml, as written in the original recipe)
Instructions
- Add the avocado, cilantro, parsley, and salt to a food processor. Also, add the lime juice, maple sugar, oil, and optionally, the maple syrup and oil.
- Scrape down the sides as necessary. Add water to thin the sauce until it is semi-thick but pourable.
- Add more salt, lime, or maple syrup to taste if desired.
- Cover and store in the refrigerator for up to 4 days. Seal the container tightly to prevent the sauce from losing its vibrant color.
