When I was a child, the only fruit that I liked to eat was canned pears. I KNOW. Gross. It was probably the texture and sweetness. I don’t know, but I was never a fan of peaches as a child. The fuzzy skin turned me off. Then, one summer, I had a peach shake, and it changed my life.
Peaches are a staple in my diet. I eat them in a variety of ways – in crisps, in fruit salads, and in salads with greens.
The recipe uses two ripe, sour peaches, a frozen banana for sweetness, orange juice to add a little tartness, and chia seeds to thicken and gel it up. Chia seeds thicken it up and add benefits. The oats are a great source of fiber, manganese, and other nutrients.
This is a delicious, creamy, sweet, and slightly tart smoothie that’s perfect for breakfast or as a snack. John and I shared a batch with our morning coffee recently, and both agreed that it was wholesome, sweet enough, and peachy.
Ingredients
- Two ripe Peaches (quartered and pits removed*).
- 1 Tbsp Chia seeds
- 1/4 cup rolled Oats (gluten-free for GF Eaters)
- Half a frozen banana (peeled)
- Fresh orange juice, 1/4 cup
- 1 cup unsweetened Almond Milk
- Use 1 Tbsp of maple syrup or agave ( optional for sweetness // or honey if you are not vegan)
Instructions
- Add all ingredients into a Blender. Let sit for 5-10 minutes to allow the oats, chia seeds, and other ingredients to soak. Blend until smooth.
- To thicken the mixture, add a quarter-half of a frozen banana (the amount is as written in the original recipe // adjust when changing batch size). Add more OJ or almond milk to thin.
- Adjust flavor to taste. I added a little agave.
- Serve immediately
