We then added some healthy partners to the mix, including almond milk, flaxseed, walnuts, and whole-wheat flour. Those who are gluten-free can use a blend of oat or gluten-free flour to achieve similar results. I added some streusel to the mix because it worked so well with the blueberry pancakes.
The pancakes aren’t fluffy, but they still taste like a banana walnut cake.

Ingredients
PANCAKES
- One small, very ripe banana (mashed – 1 banana yields about 1/3 cup)
- 1 tsp of baking powder
- 1/2 tsp baking soda
- One pinch of salt
- 1 Tbsp. flaxseed meals
- Use 2 1/2 Tbsp of water
- Earth Balance (melted or any other non-dairy Butter)
- 1/2 tsp pure vanilla extract
- Half a cup of vanilla almond milk or other milk, unsweetened
- Use gluten-free blend, oat, or whole wheat flour instead of 1/2 cup pastry flour
- Add two tablespoons of raw walnuts to the topping.
STREUSEL
- One heaping Tbsp of raw sugar
- 2 Tbsp unbleached all-purpose flour
- Earth Balance (or any other non-dairy spread)
Instructions
- Preheat oven to 350 degrees F. Mix sugar and flour in a small bowl, and then add Earth Balance. Combine well. Spread the mixture on a baking tray and bake it for 5 to 7 minutes or until it is light brown. Remove from the oven and place aside. There will be leftover streusel.
- Preheat an electric grill (or a large skillet) on the stovetop to medium heat. The surface should be warm but not scalding hot, and oil shouldn’t smoke when it comes into contact with it.
- Add the mashed banana to the large bowl that you used before. Then add baking powder, baking soda and salt. Allow to sit for a few minutes.
- Stir in Earth Balance and almond milk.
- Add flour next and mix until combined. If your batter is too thin, add more flour. If it’s too thick, add almond milk. Let the batter rest for 5 minutes.
- Pour 1/4 cup of batter on the griddle.
- Sprinkle walnuts on top and sprinkle streusel over it. Flip the cake when bubbles form in the middle of the cake, and the edges are slightly dried.
- Then cook for another 1-2 minutes on the other side. Top with an extra sprinkle of streusel and walnuts, and drizzle maple syrup (optional).
