
It’s simple! Swap traditional guacamole ingredients like lime and cilantro for Mediterranean-friendly flavors like lemon, sun-dried + fresh tomatoes, oregano + parsley, and kalamata olives. Only eight ingredients are needed, plus one bowl and 10 minutes.
This is a delicious, savory dip, similar to guacamole but with a different level of flavor. Imagine a mix of guacamole with Greek salad.
This would make the perfect dip to go alongside Mediterranean-inspired entrees, especially my Mediterranean Baked Sweet Potatoes, Chickpea Shawarma Salad, Chickpea Shawarma Sandwich, and Easy Vegan Falafel.
It can be dipped with anything, including tortilla chips. My favorite is pita. Serious yum.
Ingredients
- Two large ripe avocados (halved, pit removed)
- Lemon juice 2 Tbsp
- Sun-dried tomato chopped one heaping tablespoon
- 3 Tbsp diced cherry tomato
- Red onion, 1/4 cup diced
- Oregano dried (or substitute fresh oregano): 1 tsp
- Fresh chopped parsley, 2 Tbsp
- 4 whole kalamata Olives (pitted & chopped // optional).
- Use one pinch of each black pepper and sea salt
Instructions
- Use a potato masher or pastry cutter to mix and mash the avocado and lemon in a large bowl.
- Stir to combine the remaining ingredients. (Olives are optional). Taste and adjust salt and pepper as needed.
- If needed, adjust other flavors by adding more lemon to increase acidity, sun-dried tomato for a deeper tomato flavor, onion for crunch/spice, or parsley or oregano.
- Enjoy with pita chips or vegetables. Fresh is best, but leftovers can be kept in the fridge for up to 2-3 days.
