It’s still a vivid memory of the day I discovered that a small of my favorite blizzard, the banana cream pie with mounds of whipped cream on top, contained 60 grams of sugar. A small. Since I started the year by going mostly milk-free, I have been experiencing major cravings for blizzards. The No Bake Cookie Blizzard is vegan and gluten-free.
This is a simple recipe to make. Two ripe bananas frozen in the freezer, a generous amount of peanut butter, and a splash of non-dairy liquid milk will give you your base. Then, add a couple of no-bake cookie pieces, pulse it again, and voilà, you’ve got a “blizzard” of creamy peanut butter bananas with bits from the no-bake cookie “dough. Yeah, trust me.
The banana butter is smooth, creamy, and sweet. It’s slightly salty because it’s natural.
The cookie dough pieces scattered throughout the mixture make it a little fudgy.
Gluten-free and vegan
Ingredients
- Two ripe Bananas (previously quartered and frozen).
- 2 Tbsp crunchy natural salted peanut Butter
- I used Silk Coconut Milk.
- No-bake cookies with a PB filling.
Instructions
- Blend the bananas with peanut butter and non-dairy liquid in your blender until smooth, thick, and creamy. You can start with less milk if you want a denser texture. Add more milk to make sure it blends evenly.
- After blending, add two bite-sized no-bake cookies and pulse two more times to combine loosely.
- Serve immediately. Optional: Sprinkle with a crumbled cookie bit. Serve immediately.
