I love grilled sandwiches. Especially the cheddar variety. As I’ve mentioned before, I need to monitor my dairy intake. But you can’t stop a girl from eating bread, so I had to get creative. This beauty was just about to come into my mind. I present to you, my friends, the grilled almond butter, dark chocolate, and pomegranate sandwiches. I promise that your taste buds will be grateful.
Making this sandwich couldn’t be easier. Butter two crusty slices of bread and spread almond butter on them. Then, pile quality dark chocolate and pomegranate seeds on top. This sandwich is incredibly tasty and satisfying. It’s good enough for lunch but decadent enough to be called dessert.
This is my kind of dream sandwich. Technically, I suppose bananas could replace the pomegranate. But can be flexible. Pomegranates are an excellent way to try, and they go well with dark chocolate and almond butter.
This recipe is amazing! The almond butter and dark chocolate create a creamy, decadent filling, while the pomegranate arils give each bite a sweet, tart but slightly tart taste. What about that crispy, perfectly buttered crust? Don’t even get me started. Make this sandwich.
Ingredients
- Whole grain crusty bread, four slices
- Use Earth Balance butter or olive oil instead of 2 tablespoons dairy-free Butter
- 4 Tbsp salted almond butter
- Dark chocolate, four squares (dairy-free for vegans; do not exceed 70% cacao).
- 2-3 Tbsp pomegranate perils*
Instructions
- Heat a large skillet on medium heat.
- Butter the outside of the bread slices, then spread almond butter on the inside of one-half of them.
- Add two squares each of almond butter and chocolate to the top of the slices. Top with pomegranate seeds. Place the sandwich into the skillet and top with the second slice of bread. Butter the buttered side.
- To compress, push down with a heavy-duty spatula. Flip the pan gently when it is crusted and browned on the bottom – approximately 2-3 minutes. (be sure not to burn).
- Cook another 2-3 minutes for the other side. Serve immediately.
