These waffles, joking aside, are my favorites. It’s almost perfect: warm, cinnamon-brown-sugar apples in a waffle batter with whole grain and oats. The good news is that they are super easy to make. The good news? They are super easy to make.
This recipe is one bowl. That means fewer dishes! This is great. It’s also ready in 30 minutes. There’s nothing better for those who want to make some sophisticated waffles.

Ingredients
For Apples
- Three medium apples (two tart and one sweet, peeled & cubed).
- 1 Tbsp of vegan butter or olive oils
- Brown sugar ( optional ) – 1-2 Tbsp
- 1/4 tsp. cinnamon
Waffles
- 1 Tbsp flaxseed meal (to make flax egg)
- Use 2 1/2 tbsp of water to make flax eggs.
- Use avocado oil or vegan butter instead of 1 Tbsp.
- Unsweetened almond milk, one scant cup
- Use one tablespoon of maple syrup (or agave if you’re not vegan).
- 1 cup of unsweetened pumpkin or applesauce
- 1/4 cup brown sugar
- 1/4 tsp. cinnamon
- 1/4 teaspoon salt
- Baking powder, 1/2 tbsp
- 1 cup whole wheat pastry flour
- 1/4 cup oats
Instructions
- Start by sautéing your apples. Heat a large pan over medium heat. Add butter and apples to the pan once it is hot. After a few moments, add brown sugar and cinnamon. Cover and let the steam soften. Stir frequently. Remove the lid once softened (about 4 to 5 minutes). Allow caramelization. Remove from heat.
- Then, make your waffles. Prepare flax eggs by mixing water and flaxseed in a large dish and letting it rest for five minutes.
- Add the maple syrup, applesauce, and brown sugar. Add almond milk and whisk again.
- Sift flour, baking soda, cinnamon, and salt into a sifter. Then, sift it over the wet ingredients. Stir until just combined. Fold in the oats and then half of your apples. Add almond milk if the batter seems too thick. While preheating the waffle iron, let the batter rest for five minutes.
- After preheating, generously spray the waffle iron in non-stick cooking spray. Spoon about 1/2 cup of batter into the center of the iron and press down to spread out the batter. Cook according to the instructions of your machine. I set mine on the darkest setting to make it extra crispy.
- Remove from oven and place on cooling rack. This will allow steam to escape and crisp up. Warm it with vegan butter, such as Earth Balance, maple syrup, and leftover apples. Store in a freezer-safe container and reheat in the oven or toaster.
